Blog NR 2 – Recipe

Hello hello,

My flatmate Ana always says that I am a good cook and asks what I´m cooking. Today I told her about a recipe app (German „Chefkoch“) and said that this app suggests random recipes to me every day. She replied: “I wish I had someone who suggested to me every day what I could cook.”

This post, Ana is unfortunately not your “Dayli Recipe Giver” but I use your comment as an opportunity to share one of my favorite recipes with you and everyone else who is looking for new recipes. It’s easy, vegan and great for using up leftover veggies. By the way, the recipe isn’t mine, it’s from my boyfriends mom. Thanks for that!! <3

Recipe for vegetable curry:

Ingredients:

– Vegetables (everything you have: Onions, Carrots, Kohlrabi, Courgettes, Peppers, Cauliflower, Broccoli, Leek, Sugar snap, Spring onions, Mushrooms, …)

– approx. 1⁄4 liter (250 ml) of vegetable stock

– 1 can of coconut milk (2 cans for large quantities)

– Red curry paste

– little bit of oil

– Salt pepper

– As a Side dish: rice (tastes also good with fresh bread)

Preparation:

1) Chop all the vegetables into small pieces.

2) Depending on the amount, use a pot or pan, add some oil and then onions and the “hard” vegetables (like carrots or kohlrabi) and sauté for about 3-4 minutes. 

3) Then deglaze with vegetable broth (simply dissolve broth powder/cubes in water).

4)  Add all the other vegetables, stir, season with salt and pepper.

(Now it´s also time to cook the rice!)

5) Add coconut milk and curry paste. Boil everything. A total of max. 25 minutes cooking time (otherwise the vegetables will be too soft)!

How to cook rice?

Put twice as much water as rice (1 cup rice = 2 cups water) with salt. When the water is boiling, cook for about 10-15 minutes or until the rice has absorbed the water.
